Shrimp with tomatoes and feta on baguette.

Cut about 3 large tomatoes into eighths, lay in baking pan. Cover in olive oil and minced garlic. Bake at 450 for about 10 - 15 minutes.

Stir in 1lb of shrimp, a bit of lemon juice, a bunch of parsley, a little more garlic, and cover in feta. Bake for about 10 - 15 minutes, until shrimp are cooked. Spoon over baguette, or angel hair, add some more feta if you like, and enjoy!

The recipe I used had the tomato bake time at 20 minutes, but they came out more cooked than I would have preferred them. I think 10 - 15 minutes would be good.

Chicken with Brussels sprouts and asparagus!

Sprouts and asparagus were baked in the oven at 400° in (100% Italian) extra virgin olive oil, garlic, pepper and salt. Sprouts cooked for about 30 minutes, asparagus for only 10 minutes. Chicken was pan-fried in olive oil with Weber Kick’N Chicken seasoning.
